How to Select Kumquats
Ripe kumquats are deep orange colors, firm and freshly scented. If the kumquats have soft spots, blemishes or green skins avoid them.
How to Store Kumquats
Kumquats should be stored in a tightly sealed plastic bag in the refrigerator for up to 2 weeks. They can be stored at room temperature but for just a few days.
How to Freeze Kumquats
Kumquats can be frozen whole or they can be sliced. Wash the fruit and if slicing, gently remove the seeds. In a saucepan mix 2 ¾ cups of sugar with 4 cups of water until the solution is clear, bringing to a boil. Allow the syrup to cool and then pour it over the kumquats. Place the fruit and syrup in an airtight container or freezer bag and place in the freezer.
How to Ripen Kumquats
If the skin of the kumquat is still slightly green the fruit can be ripened at room temperature. However, the sweetness level of the fruit will not change significantly once it has been harvested.
