How to Select Kiwi Fruit
Select a kiwi that is unblemished and firm to the touch though not rock hard. Gently press the kiwi between your fingers and it should give to the pressure. If the fruit shows signs of mold, shriveling or soft spots, select another. The size of the kiwi is not relevant to the taste.
How to Store Kiwi
Kiwi should be stored on the counter until it ripens and then should be stored in a plastic bag in the refrigerator for up to a week.
Peel and slice fully ripe kiwi, place slices on a baking sheet and place them in the freezer. Once the fruit is frozen package it in an air tight freezer safe container and return to the freezer. A syrup pack or dry sugar pack can also be used when freezing kiwifruit.
How to Ripen Kiwi
Kiwi can be stored in the refrigerator and ripened at a later time. When you are ready to ripen the kiwi fruit simply place it on the counter at room temperature for a few days to allow it to soften. If you’d like to speed the process up a bit, place the kiwi in a paper bag with an apple or banana. The ethylene gas will allow the kiwi to ripen faster.
