How to Select Figs
Figs do not ripen once they have been picked. Figs that are too firm are not ripe and will not ripen properly for eating. Ripe figs should be tender and yield to the slightest pressure, they should not be mushy. Select figs that are deep in color, plump, clean and dry with smooth, unbroken skin. The stem should be securely in place. A loose stem is a sign that the fig is overly ripe. A fig should have a mildly sweet fragrance not smell sour. A sour aroma means the fruit has begun to ferment.
How to Store Figs
Fresh figs are best when kept at room temperature and consumed within the first couple of days of purchase. They can be stored in a plastic bag in the coldest part of the refrigerator for up to two days. The chill in the refrigerator may take away from the full flavor of the fig but will extend the time you can keep it.
How to Freeze Figs
Freezing figs can devalue them creating a mushy texture, however, they can be frozen. To freeze figs remove the stems and wash them. They can be frozen peeled or not peeled, whole or sliced. Dip the fig in an acid wash of frozen fruit juice concentrate, such as orange, cranberry, or lemon juice to prevent discoloration. Then freeze them in a single layer on a baking sheet and then transfer them to an airtight container or freezer bag and store them in the freezer.
How to Ripen Figs
Figs can ripen at home if they have been picked late enough in the developmental cycle. Figs that are too green and under ripe will not ripen enough to be enjoyed. Figs picked at the right time can be placed on a flat surface and allowed to ripen at room temperature. Turn them occasionally so they ripen evenly. Do not refrigerate the figs until they have ripened all the way, they will not ripen in the refrigerator.
