How to Select Cherries

Cherries should be plump and firm with a bright glossy skin and a darker tinge.  The darker color usually indicates ripeness, the darker the cherry the sweeter the taste.  Select cherries that have no blemishes.  Inspect the stems of the cherries as these are good indicators of the health and freshness of the fruit.  Cherry stems should be bright green, not dried out.  Wrinkling around the stem of the cherry indicates that the cherry has been at room temperature, the fruit may still be sweet but is possibly past its peak freshness.

How to Store Cherries

Cherries should be stored in a plastic bag, in the refrigerator as soon as possible. Do not wash cherries until you are ready to eat them as the extra moisture leads to spoilage. Cherries can be stored in the refrigerator up to a week.

How to Freeze Cherries

cherriesRinse fresh cherries in cool water and then drain and pat dry. Remove the stems and pit the cherries. Cherries frozen with the pit still in them tend to have an almond taste from the pit. Cherry juice stains so be sure to protect your work area as well as your clothing. Place the cherries in a single layer on the baking pan and put the pan in the freezer. Freeze the cherries until they are frozen through and then transfer them to a plastic freezer bag or air-tight container and then return them to the freezer.

How to Ripen Cherries

Cherries are not a fruit that ripen much after they have been picked off the tree so it is important to select cherries that appear to be ripe. However, if you have under-ripe cherries place them in a single layer on a cookie sheet or in a bowl and store them in a cool, well ventilated location away from direct sunlight. Allow the cherries to sit for a couple of days and then check their status, if they are still not ripe enough allow them to sit longer. This may allow them to ripen enough to enjoy them. Note that cherries stored in a plastic bag may collect moisture and begin to decay.
